Sweet Potato Bisque

Recipe Ingredients

  1. 4 quarts sweet potato, peeled and chopped

  2. 4 cups water

  3. 1/2 cup Anchor Unsalted Butter

  4. 1/2 cup light brown sugar

  5. 2 tablespoons kosher salt

  6. 3 tablespoons orange zest

  7. 1/2 cup heavy cream

  8. 2/3 cup bacon, cooked and chopped

  9. 1/2 cup maple syrup

  10. 1/2 cup toasted pecans, roughly chopped


Method

  1. Place potatoes into a large sauce pot and cover with water.

  2. Add Anchor Butter, brown sugar, salt, and orange zest to the pot.

  3. Bring to a boil, reduce heat and allow to simmer until tender.

  4. Strain potatoes, reserving liquid.

  5. Transfer potatoes to blender.

  6. Add just enough liquid so that the potatoes puree easily; pulse if needed.

  7. Remove puree from blender and place back into a clean sauce pot.

  8. Stir in heavy cream. Bring to a boil.

  9. Ladle into desired serving dish, garnish with bacon, maple syrup and pecans.
