1 lb Anchor Salted Butter
1/2 cup cooked bacon, chopped
5 tablespoons chives
1/2 teaspoon kosher salt
Allow Anchor Butter to soften at room temperature for 1 hour.
Once butter has soften, add bacon, chives and salt; beaten with an electric mixer until completely incorporated.
Transfer to a piece of plastic wrap and roll into a log (1 inch diameter) and refrigerate until solid.
Remove plastic and slice as needed in to 1 ounce medallions.
